🍪 Ruby Matcha Marble Shortbread

Buttery shortbread cookies topped with creamy white chocolate, sweet ruby chocolate, and finished with a matcha marble drizzle.Crispy outside, crumbly inside with a beautiful marble finish — perfect for gifting or tea time.

  • Shortbread Dough
  • 250 g cold salted butter if using unsalted butter, add 1/4 tsp salt
  • 80 g icing sugar
  • 90 g milk powder
  • 300 g all-purpose flour
Chocolate Coating
  • 350 g white chocolate compound
  • 100 g ruby chocolate
Marble Drizzle
  • 50 g white chocolate compound
  • 50 g matcha spread

Method
 

👩🏻‍🍳 Instructions
    1️⃣ Prepare the Shortbread Dough
    1. In a large mixing bowl, add cold butter and icing sugar.
    2. Using a spatula or hand mixer, mix until the butter becomes soft and slightly creamy.
    3. Add milk powder and mix until well combined.
    4. Gradually add all-purpose flour.
    5. Mix until the dough comes together and forms a soft, non-sticky dough.
    6. Tip: Avoid overmixing to keep the cookies tender and crumbly.
    2️⃣ Shape the Cookies
    1. Place onto a baking tray lined with parchment paper.
    2. Lightly flatten the cookies using your palm or a fork.

      1️⃣ Prepare the Dough
      1. In a large mixing bowl, add cold butter and icing sugar.
      2. Using a spatula or mixer, cream the butter and sugar together until the mixture becomes smooth and slightly fluffy.
      3. Add milk powder and mix until well combined.
      4. Gradually add all-purpose flour.
      5. Mix until everything forms a soft dough.
      6. Tip: Do not overmix to keep the shortbread texture light and crumbly.
      2️⃣ Shape the Cookies
      1. Arrange the cookies on a baking tray lined with parchment paper.
      2. Lightly flatten the cookies using a fork or spoon.
      3️⃣ Bake
      1. Preheat oven to 170°C.
      2. Bake the cookies for 15–18 minutes or until the bottom edges turn light golden.
      3. Remove from oven and allow the cookies to cool completely.
      4. Important: Chocolate coating should only be added when cookies are fully cooled.
      4️⃣ Prepare Chocolate Coating
      1. Melt white chocolate compound using a double boiler or microwave (short intervals).
      2. Melt ruby chocolate separately and mix it with the white
      3. pour the chocolate over the cookies
      5️⃣ Make Marble Drizzle
      1. Melt 50g white chocolate compound.
      2. Drizzle the mixture over the cookies. ( do the same for matcha )
      3. Use a toothpick or skewer to create the marble pattern.
      4. 6️⃣ Set the Chocolate
      5. Leave the cookies at room temperature or chill in the fridge for 10–15 minutes.
      6. Allow the chocolate to fully harden before serving.
